DOUBLE-SIDED, CARBORUNDUM SHARPENING STONE INSTRUCTIONS
- Designed for stainless steel knives, fish hooks, scissors and cutting tools
- Non-slip base for easier, safer sharpening
Whetstones for sharpening knives provide a durable, lasting edge that is easy to maintain and safer to use. The term whetstone indicates that you use water to lubricate the stone before and during use. Soak the stone for 10 minutes before using. Do not use oil, it will ruin your stone.
Having to apply extra pressure to cut using a dull knife can cause injuries as the knife can slip or pierce objects unexpectedly. A sharp knife is easier to control particularly when filleting fish. Use this stone according to the instructions and you will see why chefs and sportsmen alike prefer a good whetstone above any other type of sharpening device.
Begin with your lower-grit stone. Place the heel of your knife on the far edge of the stone, holding the blade gently but firmly with both hands at a 15- to 20-degree angle and knife edge pointed away from you. Using even pressure, slowly drag the knife over the stone toward you down the length of the stone while simultaneously moving the knife such that the contact point moves toward the tip of the blade. Each stroke should finish with the tip of the knife touching the bottom of the stone. Lift the knife, reset the heel at the top of the stone, and repeat. As you repeat the process, a thin film of silty looking water should collect on top of the stone and on the blade. This abrasive liquid will gradually take material off the edge of your knife, sharpening it. As you continue to repeat strokes on the first time, eventually a tiny burr will form on the other side of the blade. To check for it, place the blade on your thumb, and pull it backwards. If the burr has formed, it should catch slightly on your thumb (with really fine grit stones, say 2000 or above, you won't feel this). This may take up to 30 or 40 strokes, and is the indication that you should switch and start sharpening the other side. Repeat for as many strokes as it took you to form the burr on the first side. After sharpening, hone your blade on a honing steel in order to get the edge in alignment, then test it for sharpness.
This two-sided stone has a rough side of 600 grit, and a fine side of 2,800 grit to make sharpening faster and easier. If the knife only needs touching up to stay sharp use the fine side. If the blade is heavily worn or is very dull, use the rough side first and finish with the fine side. Hold the knife blade at a 17-22 degree angle.
Wash the stone with a mild dish detergent and a sponge after each use to prevent buildup of deposits which will reduce the abrasive quality. Keep oils and grease away from the stone since these will spoil the stone.
